Ingredients

For biscuit base

  • 175g Cracker
  • 75g Butter, melted

For cheesecake

  • 11g Gelatine powder
  • 33g Water
  • 180g Cream cheese
  • 70g Sugar
  • 3 Fresh limes, juice and zest
  • 200g Nestlé Lime & Vanilla Ice Cream

For garnish

  • Few slices fresh limes
  • 6 scoops Nestlé Lime & Vanilla Ice Cream

Method

  1. For biscuit base, place cracker into food processor and process into crumbs. Pour in butter and mix it well.
  2. Place cupcake cases into a muffin or cupcake baking tin. Into each case, place 25g of crumbs and flatten it. Set aside.
  3. Bloom gelatine with water and set aside.
  4. In a bowl, whip the cream until soft peaks are formed. Set aside.
  5. In another bowl, whisk cream cheese until soft and add in sugar. Mix until smooth.
  6. Then, add in lime juice, lime zest and Nestlé Lime & Vanilla Ice Cream. Mix well.
  7. Fold in whipped cream and mix well.
  8. Mix gelatine with water until dissolved. Double boil or microwave it until the mixture looks clear. Cool slightly before folding into cream cheese mixture and mix well.
  9. Pour batter into cupcake cases until full and chill in fridge for at least 3 hours.
  10. To serve, top each cheesecake with half scoop of Nestlé Lime & Vanilla Ice Cream and garnish with lime slice. Serve immediately.
