Ingredients

  • ½ cup Nestlé EVERYDAY Milk Powder + ½ cup hot water
  • 2 tbsp coconut oil
  • 1 yellow cucumber (cut into ½ inch size)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 onion (chopped finely)
  • 2 cloves garlic
  • 1 green chilli
  • 1 stalk curry leaves
  • 1 cup chopped tomatoes
  • 1/2 tsp turmeric powder
  • 2 tsp kashmiri chilli powder (adjust to taste)
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • 1 cup water
  • ¼ cup chopped coriander leaves

Directions

  1. Heat coconut oil in a clay pot.
  2. When the oil turns hot add mustard and cumin seeds.
  3. Add finely chopped garlic and onion and sauté for a few minutes until they turn translucent.
  4. Next, sauté the green chilli and curry leaves.
  5. Add chopped tomatoes, cover the pot with its lid, and simmer on a low flame until the tomatoes become mushy.
  6. Next, add turmeric powder, Kashmiri red chilli powder, coriander powder and garam masala powder.
  7. Next stir in the cucumber pieces and fry for 2 mins. Pour water, cover the pot and cook on a very low flame until cucumbers turn tender.
  8. For a creamy consistency, pour Nestlé EVERYDAY Milk into the curry and the curry will thicken slightly.
  9. Add salt and once you get the desired consistency in the curry, switch off the heat and add chopped coriander leaves.
  10. Serve cucumber curry hot on a plate of rice.
