Ingredients

Streusel Topping
Ingredient A

  • 80g Plain flour
  • 1/8 tsp Salt
  • 50g Brown sugar
  • 100g Unsalted butter
  • 50g NESTUM
  • 20g rolled oats
  • 40g honey dates, finely chopped

Muffin Batter
Ingredient B

  • 140g Unsalted butter, melted and cooled
  • 180ml Low Fat Milk
  • 2nos Large eggs
  • 1nos Fresh lemon, grated rind only
  • 80g Castor sugar
  • 65g Brown sugar

Ingredient C

  • 160g Plain flour
  • 2.5 tsp Baking powder
  • ¼ tsp Salt

Ingredient D

  • 70g NESTUM
  • 60g honey dates, coarsely chopped

Directions

Preparation steps

  1. For streusel topping, rub together ingredients A. Chill until ready to use.
  2. For muffin batter, combine ingredients B and mix well.
  3. Sift ingredients C together, fold into ingredients B mixture and combine well. Add in ingredients D and mix well.
  4. Divide the batter to fill medium-sized paper muffin cups to nearly ¾ full.
  5. Crumble some streusel topping over each muffin.
  6. Bake in preheated oven at 170°C for approximately 25 minutes or until cooked.
