Dates Filling

  • 150 g Dates, pitted and chopped
  • 75 ml Water

Pastry Layer
Ingredient A

  • 160 g Plain flour
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Salt
  • 1/2 tsp Baking powder

Ingredient B

  • 70 g NESTUM
  • 150 g Butter, softened for 5 minutes at room temperature
  • 120 g Soft brown sugar
  • 1/4 tsp Vanilla essence
  • 1 Egg

Preparation steps

  1. For filling, place chopped dates and water and cook over low heat until softened and mixture is thick. Set aside to cool.
  2. Sift together with ingredients A. Add in NESTUM and stir well. Set aside
  3. Cream butter, sugar and vanilla together until light. Beat in egg and mix well.
  4. Add in flour and NESTUM mixture to form a soft dough. Chill in refrigerator for 10 – 15 minutes to firm up.
  5. Press half the dough into the tin until it covers the base in a thin and flat layer. Flatten date filling followed by remaining dough to cover. Prick the pastry all over with a fork.
  6. Bake in a preheated oven 160°C for 30 – 35 minutes, or until golden brown. (Rotate tray half way through baking time to ensure even browning).
  7. Cool pastry for 5 minutes before cutting it into square pieces. Arrange in 3cm apart and re-bake for another 15 minutes or until crisp. Cool down before storage.
