Who can resist nibbling on these deliciously crunchy morsels, now made even more delicious with the addition of NESTUM®!
210 g murukku flour
80 g NESTUM® All Family Cereal Original
¾ tsp salt
¾ tsp chilli powder
1 tsp cumin seeds
2 Tbsp sesame seeds
100 ml thick coconut milk
125 ml hot water
Oil for frying
Place murukku flour into a mixing bowl and rub ghee into the flour until well-distributed. Stir in NESTUM ®, salt, chilli powder, cumin and sesame seeds.
Stir coconut milk and hot water together and pour into the ingredients in the bowl. Mix well first with a spoon and then when cool enough to handle, knead lightly with your fingers. Cover dough with a clean, damp towel to prevent dehydration.
Heat oil in a wok to a depth of 5 cm over medium-low heat. Place a portion of dough into a murukku press fitted with a star nozzle. Pipe a concentric circle of dough onto a spatula or small square of paper and carefully ease into the hot oil. Add more into the oil, but do not over-crowd.
Cook until murukku are crisp and golden brown. Drain well in a wire basket and when cold, transfer into an airtight container
